Diagnosed with a wheat allergy at the age of 16, Nora spent years trying to live with the pain and discomfort experienced from eating foods with gluten.  Until recently, there were not many gluten-free alternatives available and much of what you now can find in stores lacks flavor and is usually very dry.

 Unwilling to give up great food and unable to handle the discomfort any longer, Nora developed her own blend of flour that can be used 1:1 in her favorite recipes.  The results were so good that her friends and family could not tell that they were eating gluten-free.  Soon there were requests coming in for orders and Happy Belly Bakeshop was born.

What is Gluten?

Gluten is a general name for the proteins found in wheat, rye, barley, and triticale, a cross between wheat and rye. Gluten is the 'glue' that holds foods together and helps them maintain their shape.

Celiac Disease

Celiac Disease (CD) is an inherited, autoimmune disorder in which proteins from the gluten in wheat, rye and barley damage the small intestine.  The only treatment for CD is a strict, lifelong gluten-free diet. Worldwide, about 1 in 133 people suffer from Celiac Disease. In North America, there are between three and four million people that have the disease.

Others with Gluten Sensitivity

It is possible to be intolerant to gluten without having CD or a wheat allergy.   Along with with non-celiac gluten sensitivity and wheat allergies, it is widely thought that those who suffer from autism, ADHD, multiple sclerosis and irritable bowel syndrome (IBS), among others, can also benefit from a gluten-free diet. 

Although diagnosis of Celiac Disease and gluten-free sensitivity has improved, it is estimated that only 5% to 10% are currently diagnosed.
